One such lazy recipe is lazy stuffed peppers, which can be thought of as a stand-alone dish called a “rice side dish.” Of course, the taste differs from the original recipe, but this dish also comes out with excellent taste. Therefore, we will use simplified quick recipes to prepare delicious dishes quickly and easily.

Another good thing about the proposed recipe is that for preparing stuffed peppers we select peppers that are smooth and beautiful. And for a lazy recipe, any crooked peppers are suitable, because... they will still be cut. The type of fruit is also not important, but this dish is mainly prepared with sweet bell peppers, because... it is meatier and juicier. Choose mostly fluffy rice, but if this is not the case, wash it well under several waters to wash off the gluten. Take the meat according to your taste, if you like fattier dishes, buy pork, if you prefer dietary food, give the choice to chicken or turkey.

Ingredients:

  • Sweet bell pepper - 4 pcs.
  • Garlic - 2 cloves
  • Meat - 700 g
  • Rice - 150 g
  • Salt - 1 tsp. or to taste
  • Greens (any) - bunch
  • Vegetable oil - for frying
  • Tomatoes - 4 pcs.
  • Ground black pepper - a pinch
  • Onions - 1 pc.

Step-by-step preparation of lazy stuffed peppers, recipe with photo:

1. Wash and dry the sweet pepper with a paper towel, cut off the stalk and remove the internal seeds with partitions. Cut the fruits into cubes or strips and fry in a frying pan in vegetable oil until golden brown.

2. Peel the onions and grind through a meat grinder.

3. Wash the meat, dry it with a paper towel, cut off excess fat and film and pass it through the auger of a meat grinder.

4. Wash the tomatoes and dry with a paper towel. Cut into pieces, place in a food processor with a cutting blade attachment, and grind until smooth puree.

5. Rinse the rice under several waters and boil until almost done in lightly salted water.

6. Heat vegetable oil in a frying pan and add minced meat and onions. Fry it until golden brown, stirring occasionally.

7. Add fried peppers and boiled rice to the pan with meat.

Everyone knows that sweet (so-called bell) pepper is a very healthy product. And you can prepare it in different ways. And in the cookbooks of many housewives, dishes made from this vegetable already occupy honorable and well-deserved places, among which are recipes with various fillings. But what to do if you don’t have time or are simply too lazy to stuff, because this is a rather labor-intensive and painstaking process? No problem, you can always make lazy “stuffed” peppers as a great alternative. The taste is practically the same, the ingredients are the same, but several times less labor is spent. Actually, this, of course, is not a stuffed product in its classical sense - that’s why it’s in quotation marks. Well, are you ready to take advantage of simplified technologies? Then let's go!

“Stuffed” lazy peppers. Basic recipe

Yes, it’s not for nothing that people say: laziness is the engine of progress! So you don’t need to stuff anything at all: just put the ingredients in a saucepan and stew. But for this we will need: a kilo of sweet peppers “from sunny Bulgaria”, a kilo of fresh, ripe tomatoes, several carrots, several onions, a head of garlic, vegetable oil, a spoonful of sugar or honey, 2/3 cup of polished rice. Well, salt, pepper and spices according to your individual taste - and you can start preparing “stuffed” lazy peppers.

It's very easy to cook!

Wash the rice in cold running water and place in a sieve. Boil water in a container, add salt, add cereal and cook the rice until almost done, that is, about fifteen minutes. We throw it into a colander.

While cooking the rice, peel the vegetables at the same time. Cut the bell pepper into medium strips or cubes, finely chop the onion, and coarsely grate the carrots. We crush the garlic with the flat of the knife blade and then chop it.

In a “family” saucepan with thick walls, heat the oil, put the onion in it, and fry a little over low heat until soft. Add the onions and carrots, fry, stirring, to get a golden hue.

Add fresh tomatoes cut into slices or the same cubes into the saucepan (by the way, in winter, when you can’t buy fresh ones, you can safely use canned ones, or, at worst, tomato paste), pour in half a glass of water. Bring to a boil, simmer for another ten minutes.

Place bell pepper in a saucepan. Gently mix the contents and simmer under the lid for a quarter of an hour. Add boiled and sugar. Salt and sprinkle with spices to taste, cook for a couple more minutes over low heat.

Turn off the heat, remove the saucepan from the stove, let it sit under the lid for a while - and you’re ready to serve! Lazy stuffed peppers with rice are excellent eaten both hot and cold.

For winter and every day

A similar dish - lazy peppers, “stuffed” with rice and carrots and onions, can be prepared for the winter. When there aren’t enough vitamins during the cold season, we’ll open them up and serve them to our family and friends. Moreover, during the season (late summer - early autumn), when the market and store are full of cheap ripe vegetables, such a dish can be prepared at least weekly until you get tired of it - and you won’t get tired of it soon! It is also good for those who watch their figure, follow a diet, or are vegetarians by conviction. And you can eat it during fasting - that’s how universal it is!

Lazy stuffed peppers: recipe with minced meat

But how did we forget about minced meat, you ask? Of course, lazy stuffed peppers can be prepared using this wonderful ingredient! And the dish will become even tastier and richer. In addition, you can choose the minced meat itself according to your own culinary preferences. After all, some people like light chicken (turkey) options, while others like fattier ones (assorted pork and beef or veal). So, we will need: half a kilo of minced meat (and again, it’s better to cook it yourself, and if you buy it in a supermarket, be sure to read the ingredients), an egg, a glass of rice, tomatoes - 0.5 kg, a couple of medium-sized carrots, an onion, spices (it would be good to use a mixture of peppers, it also contains salt), salt, vegetable oil. Well, and, of course, fresh bell pepper - a kilogram.

Easy and simple to cook!

Boil the rice and cool it. You can cook until half cooked, as it will undergo additional heat treatment.

We clean fresh bell peppers from seeds and cut off the stalks. And then cut into strips along the fruit. By the way, you can use ready-made lecho instead of this ingredient (this will be especially relevant in the winter season), and instead of fresh tomatoes, take tomato paste or tomato juice.

Chop the onion finely and grate the carrots coarsely. Fry both in a well-heated frying pan with a small amount of vegetable oil. Let cool. If we use fresh pepper, then it also needs to be simmered first. And if you take ready-made lecho for our dish, then simply drain the sauce - there is no need to fry it.

Add rice to the minced meat, add a little salt and pepper. Add onions and carrots to the mixture, and then pepper. Stir and simmer under the lid over low heat for about ten minutes.

We take our semi-finished product out of the container and cool it. Then - the most important task: we form small cutlets from the resulting mass. Place them in a baking dish.

Add sour cream (a couple of spoons) to the sauce remaining from the stew, stirring. Pour this mixture over the “cutlets” and place them in a preheated oven. Bake at 170 Celsius for half an hour. So, now we have dealt with lazy stuffed peppers (photos attached).

Remove from the oven and onto the table! Serve garnished with freshly chopped herbs - dill, parsley, green onions. Just lick your fingers!

In a slow cooker

Lazy stuffed peppers couldn't be easier to prepare in a slow cooker. It’s not for nothing that they say that this kitchen appliance was invented exclusively for lazy people. But, be that as it may, the fact is: the multicooker itself will do everything, well, except perhaps for the preparatory work. We take almost the same ingredients as in the previous recipe. Therefore, we will not list them again. But the method of preparing food has been slightly changed, according to the instructions of the kitchen miracle - the multicooker.

Cooking is the easiest option

We take a kilogram of sweet bell peppers and clean them from the inside from the seeds, cutting them off around the stalks. Cut into small cubes or strips - as your culinary imagination tells you.

Boil the rice until half cooked in a multicooker (the “Rice” mode is available in many models from various companies).

Peel the carrots and onions and finely chop them. Drop a little lean oil into the multicooker bowl, turn on the “Fry” mode and lightly fry the vegetables. Add diced fresh tomatoes. Then add minced meat (even if this time it will be dietary - from chicken fillet). After and Fig. Stir and simmer (Stew mode) for 15-20 minutes.

Pour chopped sweet peppers on top, add salt and spices. Instead of tomatoes, you can use natural tomato paste.

Simmer for another 5-7 minutes. After this, turn off the device and let the dish brew for a while.

How to serve

We serve this dish to the table, arranged in portions, hot, garnished with fresh herbs: parsley and dill. For such a dish you don’t even need a side dish. It is quite easy to prepare and tastes great. It is recommended as a “duty”, everyday dish (especially during the season), but can also be used as a holiday dish. In general, try to cook - you won’t regret it!

Lazy stuffed peppers are a very tasty and quick to prepare dish for every day. It's incredibly easy to prepare and tastes exactly like stuffed peppers. By the way, on a plate, the prepared food looks incredibly appetizing. This pepper is ideal to serve with sour cream, but you can also serve it without it.

  • steamed rice - 1.5 cups
  • carrots - 3 pcs.
  • sweet bell pepper- 6 pcs
  • large tomatoes- 5-6 pcs
  • onions - 1-2 pcs
  • vegetable oil- 150 g
  • lemon juice - to taste
  • salt - to taste
  • sour cream - for serving
  • spices - cumin, ground black pepper- taste
  • greens - to taste

Cooking method

Peel and wash the carrots and onions. Wash tomatoes and peppers. Remove the seeds from the pepper.


Finely chop the onion and dice the carrots or grate them on a coarse grater.


Cut the pepper into strips.


Pour vegetable oil into a frying pan (preferably directly into the cauldron where the dish will be prepared) and lay out the prepared vegetables. Stir and simmer until carrots are ready.


If the rice is not parboiled, I usually wash and heat the rice in oil or just in a dry frying pan.


Pour boiling water over the tomatoes and remove the skins (you can skip this step). Cut into rings. Finely chop the greens with a knife (I love the combination of pepper and celery, that’s why it’s my favorite in the photo).


Transfer the vegetables from the frying pan to a cauldron or pot (like mine). Add minced meat, herbs, salt and season with lemon juice and add spices to taste. Mix thoroughly and pour 3 cups of boiling water into the cauldron. Add steamed rice, lay out tomato rings and cover tightly with a lid.

Bring to a boil and simmer, without stirring, over low heat until tender (at least 40 minutes). Wrap it in something warm and let it brew. Then place on plates, season with sour cream and serve.

Many dishes have an alternative, simplified version. And not at all because today’s housewives are lazy to cook the classics. It’s just that the pace of life is so fast that there is catastrophically little time left for the kitchen. And you don’t want to part with the taste of your favorite dishes. There are lazy dumplings and cabbage rolls. But few people know about peppers with the same definition. Their taste is amazing and practically no different from ordinary ones prepared in the classical way. But you don’t need to bother with stuffing. Look how easy it is!

    Sort the rice, add water and place on the stove. As soon as it boils, reduce the heat to low and simmer for 10 minutes. Then drain in a colander and rinse with cold water.

    Free the sweet peppers from the tails, clean them from seeds and partitions. Chop coarsely so that the pieces fit into the neck of the meat grinder and pass through it.

    Mix minced pork, rice and chopped bell pepper. Salt and pepper to taste.

    Chop the peeled onion into small cubes and chop the carrots using a coarse grater. You can also cut it into thin strips.

    Fry the onions and carrots in heated sunflower oil for 5 minutes. Place into rice and minced meat.

    Add the egg, mix the resulting mass well and beat it a little. Cover the container with the minced meat with cling film and put it in the refrigerator for an hour to soak it.

    Take a baking dish with high sides and grease it with sunflower oil. Now, with wet hands, make large cutlets out of the minced meat and place them on a baking sheet close to each other, but so that they do not touch.

    Place sour cream in a small bowl and dilute it with a glass of boiled water. Add a little salt and pepper. You can throw in chopped dill. Pour the resulting mixture over the lazy stuffed peppers in a baking sheet and place them in an oven preheated to 200 degrees for 40 minutes. Do not immediately remove the finished dish, let it stand for another half hour in a warm place after the timer signal and serve.

Recently, a summer resident friend treated me to sweet peppers from her garden. She gave, as they say, from the heart. After a week, it became clear that my family would not be able to eat that amount of pepper simply by adding it to salads. The peppers began to wilt. But don’t throw away such a gift!
The peppers were all different colors and it was inconvenient to stuff them. And I thought, if there are “lazy cabbage rolls,” then why not “lazy peppers”? I wouldn’t be surprised if such a dish already exists in the culinary world. After all, ideas are in the air. But I invented this recipe just today. I decided that if the family appreciates it at dinner, I’ll post it on Review.
Wash the pepper.

We remove the insides, cut off the ugly parts from the skin.

If you find a rotten or moldy (even slightly) fruit, do not feel sorry for it - throw it away. Take pity on your health: rot and mold are extremely harmful.
We cut the pepper into rings 7-5 mm thick.

Salt and pepper the minced meat to taste. Mix.

Add rice to the minced meat. I don’t boil it in advance, I pour it dry.

Finely chop the onion.

We take a larger pan so that the food does not lie in it right up to the lid. Place in layers: half the sweet pepper, minced meat, onion, the other half of the pepper.

Pour boiling water so that the water does not completely cover the food.

And on the stove. Add a little water.
Add a little more ground pepper. Add tomato paste. I found out right during cooking that mine was finished, so I added ketchup.

Close the lid. When it boils, let's turn the heat down, but don't remove the lid. Now you can forget about the pan for 45 minutes.
After 45 minutes, add mayonnaise and simmer for another 15 minutes.
The dish is ready. Sprinkle with parsley.
And - on the table.

We eat with sour cream, ask for more!
